Vegan Corn Red Pepper Soup – Yum!

I’m not sure how I stumbled on this beautiful recipe for vegan corn and red pepper soup; I am just happy that I did! I modified it slightly, no particular reason. Both options below.

Vegan Corn Red Pepper Soup

What you’ll need:

Vegan Corn Red Pepper Soup
Colourful pepper, onion, carrots, jalapeño – chopped and ready!
  • 1 T olive oil
  • 1 medium yellow onion, diced
  • 1 large red bell pepper, diced
  • 1 c carrot, peeled and cut into 1⁄2-inch rounds
  • 1-2 jalapeño peppers, seeded and thinly sliced (depends on how hot you like your soup!)
  • t rosemary
  • 1 t thyme
  • 1 t sea salt, pepper to taste
  • 3 c vegetable broth (I use Better than Bouillon paste with hot water)
  • 3 c fresh corn kernels (from about 5 ears of corn) or 1 can of kernel corn and one of cream corn
  • 2 medium russet potatoes, peeled and sliced into 1⁄2-inch chunks
  • 1 bay leaf
  • Pinch of cayenne pepper
  • 2 T freshly squeezed lime juice
  • 1 T pure maple syrup
  • Chives (optional garnish)

What You Do:

  1. Heat up a medium size soup pot and add the olive oil

  2. Add onions, red pepper, carrot and jalapeño and sauté till the onions are transparent. Add salt, rosemary, thyme and black pepper into mixture.
  3. Stir in the vegetable broth, corn, potatoes, bay leaf, and cayenne.
  4. Bring to a boil, cover and simmer for 20 minutes, or until potatoes are tender.
  5. Uncover and simmer for 10 minutes more to let the liquid reduce a bit.
  6. Remove the bay leaf and pour half of the soup into your high speed blender (regular blender will work) and blend till smooth.
  7. Pour mixture from blender back into the soup pot. Gives you soup a creamy texture.

  8. Add lime juice and maple syrup to taste, thin with a little water if it seems too thick, and simmer for 10 more minutes.
Vegan Corn Red Pepper Soup
Delicious soup served with whole grain bread toasted.

Serve with some lovely vegan rustic bread or other sides of your choice.
